Cheesy Turkey Casserole Without Tomato Sauce or Beef
Casseroles are so delish! They usually include a tomato sauce and meet but I chose not to use them in this recipe. You know, my recipes are different here. I love that it’s a combination of vegetables and my favorite…..CHEESE! Lol. I’m hoping that you enjoy this recipe because I did.
Pasta mixed with red bell pepper, sour cream, queso dip, corn and onions.

Ingredients
1 (16 oz) bag elbow pasta
1 red bell pepper, chopped
1 medium white onion, chopped
1 (15 oz) can whole corn, drained
1 lb ground turkey
2 cups low-sodium vegetable broth
3 tbsp sour cream
1 (16 oz) container queso dip
4 oz white cheddar cheese, chopped
1 (8 oz) bag shredded cheddar cheese
2 tsp paprika
2 tsp kosher salt
2 tsp black pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp dried parsley
1 tbsp olive oil (for greasing the pan)
Instructions
Cook the Pasta:
In a large boiler, add water and set to medium until it boils. Add the pasta and a dash of salt to not stick. Drain the pasta after 10 to 11 minutes of boiling.
Cook the Turkey:
Now you may add your ground turkey to the boiler. Cook for 10 minutes. Drain afterwards.
Prepare the Vegetables:
In that same boiler, add your oil and your red bell pepper, onion, and drained whole corn. Make sure that the burner is set to medium heat. Cook for 7 to 9 minutes. Add in the drained pasta and ground turkey.
Season the Pasta Mixture:
To the pasta mix, add your seasonings and sour cream. Stir.
Simmer the Broth:
Add your low-sodium vegetable broth. Simmer for 5 minutes.
Add the Cheese:
In the boiler with your vegetables, pasta and ground turkey you can now add your cheeses (queso dip and chopped white cheddar cheese). Mix until there’s no lumps.
Prepare the pasta and baking dish:
Grease your pan with a few drops of oil and spread throughout the dish. Pour your mixture into a baking dish. Top it with your shredded cheese. Be fancy and top it with some parsley.
Prepare the Baking Dish:
Preheat your oven to 390°F. Bake the the Casserole for 16 minutes.
Serve and Enjoy:
Allow the casserole to cool for 5 minutes before serving.
